Baked Lactation Oatmeal

  • 1 10 oz package of frozen blueberries
  • 2 and 3/4 cups old fashioned oatmeal
  • 3/4 cup chopped pecans
  • 2 tbsp ground flax seed
  • 2 tbsp brewer's yeast
  • 1.5 tsp baking powder
  • 1 tsp salt
  • 2 apples, cut in half and cored
  • 3/4 cup milk whole, reduced fat, or skim
  • 1 5.3 oz container vanilla whole-milk yogurt
  • 1/2 cup maple syrup
  • 2 tbsp vanilla extract
  • 3 eggs
  • 2 tsp cinnamon


  • Preheat oven to 375°F. Coat a 9x13 baking pan with olive oil and line with parchment paper.
  • Cut apples in half and remove core. Grate apple into a large bowl. Add oats, pecans, flax seed, brewer's yeast, baking powder, salt, and frozen blueberries.
  • In a medium, mix together milk, yogurt, eggs, maple syrup, and vanilla extract. Stir into oat mixture.
  • Transfer to baking pan and sprinkle with cinnamon.
  • Bake until firm and golden brown, around 60-70 minutes. Cool for 10 minutes before serving.
